Ratatouille



I'm cooking Bacon and cabbage this evening (how very Irish?)..not quite.I boil the bacon with cloves until cooked then trim off any fat giving a small piece to the small cat who's been watching with interest-trying to disabuse her of the notion that I'm a cat killer) and then bake it in the oven for about 30 minutes.The cabbage gets steamed and then tossed in butter and freshly ground black pepper.

I'm also making ratatouille because its goregous and I can.

You need:

2 red peppers/1 yellow pepper.
1 courgette - medium
1 aubergine - medium
1 onion - medium
2 garlic cloves - more if you love it.
1 tin of chopped tomatoes
fresh herbs (rosemary, sage, parsley, oregano)
Salt and black pepper
olive oil


Do this:
Find a large saucepan.
Finely dice the onion and sweat it in the olive oil on a medium heat until the onion is translucent not brown.Add the sliced peppers and let them cook for a couple of minutes.Roughly chop the corgettes, aubergine and garlic and drop them into the saucepan on top of the onion/pepper mix.Add the tin of tomatoes and the herbs and add a small amount of salt and pepper.

Cook for 20 minutes, stirring half way through. Taste and season again if it needs it.
Serve on its own with crusty bread and a bowl of grated parmesan, as a side vegetable dish or tossed with cooked tagliatelle for a vegetarian pasta dish.
This is too nice and another great thing about it is when its been coking for long enough, everything softens and sort of blends in together so my children have no idea they're eating the dreaded courgette.

Many years ago I lived in Nice and used to take my evening meals at cafe run by a tiny dragon known as Madame Henriette. The Fr15 Menu compris, 3 courses including wine, always came with ratatouille. Leaving a clean plate was a requirement of patronage or the tiny dragon would incinerate you publicly. I loved the food, but I have never been able to cope with aubergines since. I might just try your recipe this weekend.

Hey Liam.Do try it...that recipe brings out the sweet flavour in the peppers and if you slice the aubergines thinly enough you'll hardly know they're there.
